Vegetable Patties
Variety is the spice of life! These vegetable patties are a delicious and easy way of including a greater variety of rainbow coloured vegetables, which are high in vitamins, minerals and antioxidants, into your diet. Research suggests that heart-healthy HDL cholesterol protects against heart disease and stroke. The best way to raise your HDL level is to make fruits and vegetables the largest part of your diet.
Ingredients
- 1 cup of grated carrots
- 1 cup of grated courgettes
- 1 cup of grated sweet potato
- 1/2 cup of finely chopped red peppers
- 1/2 cup of finely chopped kale
- 1/2 cup of finely chopped leeks
- 1/2 cup of finely chopped red onion
- 4 eggs
- 1 tsp Himalayan salt
- 1/4 tsp ground black pepper
- 3 tsp coconut oil
Method
- Place all ingredients into a mixing bowl
- Lightly beat the 4 eggs, then add to the vegetables and mix together
- Add the salt and pepper
- Shape into patties of whatever size you prefer
- Heat the coconut oil in a frying pan
- Fry the patties on a low heat for approximately 5 minutes on each side
