Creamy Avocado Soup

Healthy and delicious soup from a nutritional therapist

This delicious soup is packed full of healthy ingredients that have been selected to help balance your hormones. It is taken from my upcoming 12-week hormone balancing programme, which will soon be available on my Programmes Page.

This soup is best served cold and so is a perfect lunch for a hot afternoon in the summer, but can also be served as an appetiser for a healthy dinner party.

The health benefits of avocados have been well covered in many places on my website. They are full of healthy fats and are also very filling, so will help keep you full and energised for longer throughout the day. The remaining herbs and spices have all been selected for their own health benefits but feel free to experiment with the quantities to get the taste just right for your own preference.

Serves 2

Ingredients

  • 1 avocado
  • 2 cups chopped kale
  • 2 celery stalks
  • 1 cucumber, roughly chopped
  • 2 scallions
  • Juice of 1 lemon
  • ½ bunch coriander
  • ½ bunch mint
  • 1 cup coconut water
  • 1 teaspoon ground cumin
  • sea salt and black pepper, to taste
  • ½ teaspoon cayenne pepper (optional)


Method

Add all ingredients to a blender and blend to your desired consistency. (Best served cold).
