Apple Waldorf Salad
Do you struggle to make salads exciting? This delicious apple Waldorf is a new twist on the classic and is one of my favourites at lunchtimes. Everything in here is bursting with nutrition and the creamy avocado dressing adds an extra superfood to the mix.

Method for Salad
Add the ingredients to a bowl and mix well. Top with creamy avocado dressing (see below)

- 4 cups mixed leafy greens
- 1 apple, chopped
- ½ cup walnuts, chopped
- 1 cucumber, chopped
- ½ cup grated carrot
- ½ cup sprouts

Method for Creamy Avocado Dressing
Add the ingredients to a blender or food processor. Blend until smooth and serve immediately.

- ½ bunch coriander
- 1 lime, juiced
- ¼ cup water
- 1 garlic clove
- sea salt and black pepper to taste
